Beyond Delicious Meatballs with Spaghetti Squash

Tips

If you feel timid slicing a larger squash, don’t let that stop you from enjoying this delicious vegetable. Ask your produce department to slice it for you, they’ll be happy to do it!

Ingredients

1 medium size spaghetti squash

1/2 cup Follow Your Heart
Parmesan Cheese mixed
with 1/2 teaspoon
Bragg Organic Sprinkle
24 Herbs & Spices Seasoning

1 tablespoon Earth Balance
Buttery Spread

1 teaspoon kosher or sea salt

1/2 teaspoon pepper

  • Preheat oven to 400°

    Using a melon ball scoop, remove seeds from squash.

    Using a paring knife, cut 4 to 5 slits over the squash skin.

  • Place the squash cut side down in a lightly oiled baking dish or roasting pan.

    Roast until tender 45 to 50 minutes.

  • If it’s preferred to microwave the squash, place the squash cut side down in a microwave safe dish that has approximately 1/2 inch of water in the bottom of the pan.

    Microwave uncovered for 7 minutes per half. Carefully turn squash, microwave until a fork easily pierces through squash skin about 7 minutes more.

  • The top squash is microwaved & the bottom is oven roasted.

    The squash cooked in the microwave has more moisture.

  • Allow squash to cool 15 min. before scraping out spaghetti.

  • Add butter, Parmesan cheese, salt & pepper.

  • A winner on its own or with the Beyond Delicious Meatballs.
