Beyond Brats with Caramelized Sauerkraut

Tips
This entire dish is made in one pan. An iron skillet works best for cooking Beyond Meat products, it adds to the browning and texture & it’s also a pan that’s non-toxic.
Blanching the kraut before cooking makes a difference with the flavor, don’t skip this step.
Ingredients
2 tablespoon Earth Balance chopped Organic Buttery Spread
1 pkg. Beyond Meat Brat Original Sausage
1 cup finely chopped onion
½ tsp. salt and ¼ tsp. pepper
1 cup apple, peeled and finely chopped with 1 tablespoon fresh squeezed lemon juice added
2 tablespoons brown sugar
1 pkg. or 32oz. jar sauerkraut, 4 cups
¾ cup vegetable broth
Buns of choice & mustard, optional

Preheat oven to 200°. In a seasoned iron skillet, melt 1 tablespoon butter over medium heat. Add sausages and brown 2 to 3 minutes each side, 10 to 12 minutes. Remove sausages from pan and place in an oven proof dish. Cover with foil and place in oven to keep warm.

While sausages are cooking, drain drippings kraut in colander. Boil 3 cups of water then pour boiling water over draining kraut. This (blanching) takes the edge off the sourness and improves the flavor of the kraut.

Melt 1 tablespoon butter in that remain in skillet. Add onion and salt. Sauté over medium heat for 3 minutes until onion is translucent. Be sure to include brown bits from bottom of the pan left from brats.

Add apple and sauté 3 minutes until apple softens, then add 1 tablespoon brown sugar. Mix well and sauté 2 minutes more.

Add sauerkraut and pepper. Mix well then cover and cook 5 minutes.

Remove cover and stir well, making sure nothing is sticking to bottom of the pan. Add ¾ cup vegetable broth and mix well again. Return cover to skillet and reduce heat to low.

Simmer covered at low heat for 40 minutes, stirring every 10 minutes. After 40 minutes add remaining 1 tablespoon brown sugar and mix well. Return cover to the skillet and continue cooking another 15 to 20 minutes. Check more often to make sure kraut isn’t sticking to bottom of the pan. The apple being completely absorbed into sauerkraut is a way to gage the dish is ready.
